Perfectly Sweet Almond Cookies

Not too sweet but just sweet enough to satisfy that craving. Baking these cookies happened in a whim. I really wanted some cookies but I did not want to go out and buy anything that is processed and packed full of sugar, so I took my cravings to the kitchen and decided to put the time and effort into making something that is better for me and using good ingredients. Sugar is perfectly fine in moderation. When you do decide to bake with it, opt for something natural like raw cane sugar versus white/brown sugar and artificial sweeteners. *If you haven't read my blog on the affects of artificial sweeteners! check it out.


These cookies take a matter of 20 minutes to make! The same time it would take for you to drive to to the grocery store. Honestly it was a moment of mindfulness for me as well. I enjoyed the process of making these delicious cookies ingredient by ingredient.



Perfectly Sweet Almond Cookies <3


 

Your List of Ingredients

  • 1/3 cup of Raw Cane Sugar

  • 4-5 tablespoons of Butter ( I like to use Kerry Gold's Pure Irish Butter- no additives)

  • 1 Egg

  • 2 cups Almond Flour

  • 1 tsp almond extract or vanilla extract

  • 1 tsp baking powder

  • 1 tsp salt




Directions

  1. Pre-heat the oven to 350 degrees and line a cookie sheet pan with parchment paper.

  2. In a bowl add the raw cane sugar, melted butter, almond or vanilla extract and one egg. Whisk together until the ingredients are combined and the sugar has begun to dissolved from the mixing and the warm butter.

  3. Next add the almond flour, baking powder and salt.

  4. Combine the ingredients, forming it into a cookie dough.

  5. Take 1.5 tablespoon of the cookie dough and form them into a ball. You should be able to get 12 cookies from the dough. Add the cookie dough balls to the lined pan and press an almond or cashew into the middle, and then press the cookie down slightly.

  6. Place the pan in the oven and bake for 15 minutes. Once they are done, take them out to cool and serve.


 

You can serve them warm or room temperature. I personally like a warm cookie, so they are perfectly ready to eat out of the oven. Enjoy these scrumptious cookies without the excess sugar and calories.
