Fresh Chickpea Salad Sandwich

A vegetarian twist to the classic chicken salad sandwich. Spring is here and what better way to enjoy it with a refreshing chick pea salad sandwich. You won't miss the chicken trust me! but it tastes great with chicken too! Great for an outdoor picnic while you enjoy this beautiful spring weather.


Fresh Chickpea Salad Sandwich



Ingredients:

Serving size 3 sandwiches.


- 6 slices of whole wheat bread

- 1 cups of spinach

- 1 Avocado

- 1 can of Chickpeas

- 1/2- 1 cup of vegan mayo (Chosen brand works well)

- Garlic powder

- Onion powder

- mustard (dijon, honey mustard if you want the sweetness, regular mustard)

- 1/2 tsp Dill seasoning

- Salt and Pepper to taste.

- 1/4 tsp of paprika

Section 2: Add Numbered Directions


1. Drain the chick peas and wash them. In a bowl add the chickpeas and smash them until you get a semi smooth mixture.

2. Add vegan mayo, choice of mustard, onion powder, garlic powder, dill seasoning, salt, pepper and paprika. Mix the ingredients until they are well combined. Set aside in the fridge to chill for 30 minutes.

3. Take two slices of bread and spread as much chick pea salad on the bread as you like. Layer avocado slices and spinach and top with the second slice of bread.

4. Cut in half and enjoy!
