Savory, mouthwatering, delicious and vibrant colored rice; paired with fajita seasoned chicken drumsticks. Packed with flavor and perfect for your weekly meal prep.
If you're looking for something special to make for any occasion. This recipe will be a hit for anybody. I made this dish for Father's Day at my parents house and they absolutely enjoyed it! The best part I had leftovers to take for lunch the next day. This a great recipe for meal prep as well! You have your carbs, protein and I would just add some veggies or a salad on the side to make sure your getting your nutrients and fiber from those greens.
Spanish Rice and Chicken Drumsticks
2 tbsp unsalted butter
1 tbsp olive oil
2 cups uncooked rice
1 cup chopped onion
1 sweet bell pepper
3 cloves of garlic
14 oz fire roasted diced tomatoes
8 oz tomato sauce
2 cups of low sodium chicken broth
10 Chicken Drumsticks
1 tsp cumin
1/2 tsp chili powder
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon pepper
3 bay leaves
1/2 tbsp Cumin
2 tsp Chili powder
2 tsp Paprika
2 tsp Cayenne pepper
1 tbsp olive oil
2 tbsp chicken stock
Directions for Cooking the Rice
In a non stick pan add butter and olive oil. Let it heat up and then add onions, bell peppers and jasmine or basmati rice ( these are the best rice to use as their aroma is beautiful). Cook until the rice is golden brown and the veggies are cooked down.
Next, add in your garlic and sauté for one minute.
Then, you will add in the can of fire roasted tomato and tomato sauce. Combine well.
Next, pour in the low sodium chicken stock. Mix it well and add bring the mixture to boil.
Once the mixture is boiling, add 3 bay leaves on the top and cover to cook for 15 minutes. Check on the rice every 5 to see if you may need more then 15 minutes but this should be perfect.
Directions for cooking the chicken
In a bowl add all the spices listed, olive oil and water. Mix it together. Taste to check the salt level.
Peel the skin off the drumsticks, then make some cuts in each drumstick.
Pour the mixture on the chicken and marinate for 30 minutes. Add more mixture if needed. You can air fry, grill or bake the chicken according to your preference.
Add the cooked drum sticks on top of the cooked rice for plating and enjoy!
