Sweet Soy Garlic Shrimp and Avocado Salad w/ Miso Dressing

Soy Garlic Shrimp and Avocado Salad w/ Miso Dressing

Ingredients:

Sweet Soy Garlic Shrimp Marinade (Serving 4)

  • 1 pound peeled and deveined shrimp (about 20 pieces)

  • 2 tbsp minced garlic

  • 1/4 cup soy sauce (low sodium soy sauce and coconut aminos works too!)

  • 1/3 cup honey (for sweetness!)

Other Ingredients:

  • 2 Avocados

  • 2 cups Wonton strips

  • Container of Spring Greens

Simple Miso Dressing

  • 3 tbsp miso paste

  • 1/2 tbsp soy sauce

  • 1/2 honey

  • 1-2 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tsp grated ginger

Directions


  1. In a bowl prepare the marinade by mixing soy sauce, honey and the minced garlic.

  2. Marinade the shrimp and refrigerate for 30 minutes to an hour or over night. Let all the flavors soak in.

  3. Prepare the dressing. In a bowl add miso paste, soy sauce, honey, sesame oil, rice vinegar and grated ginger. Mix together and put it aside.

  4. Cut avocados into square pieces and put aside.

  5. In pan add a tablespoon of oil and add the shrimp. Shrimp cooks very quickly so keep an eye on it. Flip over half way and cook on both sides.

  6. Prepare 4 containers add 1 big handful of spring green mix in each container, divide and top with shrimp, avocado, wonton strips and miso dressing.

  7. Toss the salad and ENJOY!
