Dairy Free Veggie Frittata

Some days I like sweet breakfast but somedays I am craving a savory taste. My "Dairy Free Veggie Frittata" is a perfect savory choice packed with protein and veggies! Wonderful for meal prep.

Cook Time: 15-20 mins

Total Time: 30 mins

Servings: 4

List Your Ingredients:

  • 1 Medium Red Bell Pepper

  • 1- 1 1/2 cup of broccoli florets

  • 2 cups of spinach

  • 1 garlic cloves

  • 1/4 cup of diced red onions.

  • 6 eggs

  • 2 tbsp plant based butter

  • 1/2 teaspoon of salt

  • 1/2 teaspoon of black pepper

  • 1/2 Italian seasoning

Directions:

  1. Preheat the oven to 350 F. In a pan add 2 tablespoons of plant based butter and sauté the garlic and red onions. Once the those have softened add the red bell peppers. As that softens add the broccoli florets and finally the spinach. Saute until cooked. Set the mixture aside to cool.

  2. In a bowl crack 6 whole eggs. Add the veggie mixture, salt, black pepper and Italian seasoning. Whisk together and then pour mixture into a 9x9 inch pan.

  3. Put the pan in the oven for 15- 20 minutes until the top is golden and puffed.

  4. Cut into 4 pieces to incorporate into your meal prep.

  5. Enjoy!
